To link to an email address in a Wiki page from the Visual editor, first type in the email address you want to send to and highlight it.
Click the Link icon in the toolbar.
In the Add a link dialog, click "External Site". The box will automatically populate with the email address. The Visual Editor capitalizes the first letter - make it lower case again if appropriate. Add "mailto:" before the email address. Click "Done"
Be sure to click "Save Changes..." button in the upper right to save the page.
